A Closer Look at Winter Damage

But first, take a look at this gorgeous rainbow that we had on Friday! The five-day stretch of warm temperatures last week really jump-started the garden. Now that plants are putting out new growth, it is easier to see what kind of damage the winter left. Back in mid-January, we experienced five straight days of below-freezing temperatures. This caused much damage in Portland and areas where frigid winds were a factor. Here, we were fortunate to not get the wind and the cold temperatures were dampened by a blanket of snow. That said, it was a tough time for the garden and there are noticeable casualties but no outright deaths that I have seen. The bottlebrush ( Callistemon 'Woodlander's Red') did not like the cold at all. It was planted six years ago, in the north-facing garden no less, and I've not experienced die-back on it until now. A local expert said to cut it all the way back so that is what I did. If it doesn't make it, I won't be too distraught. It is

Tomato Cups



Surprise, I'm posting a recipe that is not a sweet. These savory little treats are good for parties and get-togethers. They are also super easy to make.

Tomato Cups

1 can large refrigerated biscuits
½ c. mayonnaise
1 c. shredded cheese (mozzarella,cheddar or a blending of both)
1 10 oz. Can Rotel tomatoes, drained
1 teaspoon dried or fresh basil
½ onion, chopped
10 pieces bacon, cooked and crumbled

Preheat oven to 350 and lightly grease a mini muffin tin.
Separate each biscuit into quarters.
Press a biscuit quarter into each cup (I use a floured mini tart shaper to help form the cups).
Mix remaining ingredients in a medium sized bowl.
Spoon filling in the biscuit cups about halfway full.
Bake 15 to 20 minutes until golden brown.

  5. Sounds great! I love anything with bacon and tomatoes! Have you ever used the "filling" in a puff pastry? Since you have a pestle, I ask -- that's what I also use when making appetizers in muffin tins.

  6. Cameron and Lisa, actually it is not a pestle but a mini tart shaper. I couldn't think of what it was called but remember that it came from the Pampered Chef and I located it on their website. I haven't used the filling in a puff pastry but I'm sure it would be fine.

  17. Oh my word! I was doing really good on my diet today until you made my salivary glands just go haywire. I've got that little muffin pan too. That little muffin pan is sinful-- as you can do a lot with dough and ingredients in those bite size morsels.
