Clark County Mini-Tour

It is a rare rainy day here in August (or more accurately, a wet, drizzly day). That means a break from watering and a good chance to catch up on blogging and other computer-related tasks. Before I continue with my England tour highlights, I wanted to share photos from this past Sunday's mini-tour of four gardens here in Clark County (an event sponsored by HPSO - Hardy Plant Society of Oregon). I saw three of the gardens on Sunday. I had already visited the fourth one, Lynne Heidsiek's native habitat garden, when she was part of the Study Weekend tour that we were on.  Our first stop was the marvelous shade garden of Margaret Stapenhorst. A bluestone patio is surrounded by towering mature trees that shade a woodland garden. There was a fern table and a moss garden, as well as garden art by Steve Farris. Loved, loved the waterfall. Easy Peasy Fudge


I think this was the first time I have made fudge. This recipe is so simple and so good. I can't hardly stay out of it. You can make this without the nuts.

3 cups of  semi-sweet chocolate chips
1 14 oz. can sweetened condensed milk
1/4 cup butter (1/2 stick), cut into small pieces
1 cup chopped walnuts

Spray an 8x8 inch pan with cooking spray. Cut 2 pieces of wax or parchment paper long enough to extend outside the pan. Place them in the pan criss-crossed (this will create "handles" that make it easier to remove them form the pan).

Place the chocolate chips, condensed milk, and butter in a double boiler over a pan of shallow water on low heat. Melt the mixture, stirring occasionally.

Remove from the heat and stir in the nuts.

Pour into the prepared pan and refrigerate for 2 hours or more. Remove from the pan by gently lifting the handles of the wax paper. Cut into pieces with a sharp knife.

    Sounds tasty -- dangerously so ;-)

    I've been on a muffin-making binge myself -- cranberry muffins, blueberry muffins, mixed berry muffins, raspberry muffins and - the piece de resistance - banana-walnut muffins!

    But with some leftover walnuts, your fudge recipe is sounding mighty tempting...

  4. Wow, that recipe sounds very easy and delicious. Perhaps I'll give my "stirring constantly" arm a break and try this instead. It also doesn't sound as sugary sweet as some fudge. Thanks for this!

  5. I found an easy one and an easy peanut butter one that my hubs has asked me to make about 5 times over the last 2weeks. quick and easy! Happy New Year!
